Recipe swap
When I was younger, I looked forward to lunch, gym, recess or Saved by the Bell, depending on the time of day. Now I look forward to coffee, lunch, tea or … this afternoon’s reward … writing my grocery list.
So in honor of the highlight of this Monday, I will share with you my new favorite recipe and perhaps get some inspiration for my upcoming and ever-exciting trip to the grocery store. Please share your favs as well! (And because I’m at my desk, with a pile of expense sheets vaguely masking my unwork-related typing, this will be a rough estimate and not a precise recipe.)
Ingredients
– 1/3 bag of frozen dough – the kind that’s already in the shape of rolls (follow directions to let it rise, usually takes 3-5 hours)
– 1/4 c pesto in a jar or make it homemade
—- for homemade pesto, you chop up fresh basil, toasted almonds, fresh garlic and olive oil
– 1 c shredded mozzarella or your favorite cheese
– a bag of frozen broccoli, the kind that’s already chopped
– 1 lb of cooked chicken, chopped
– olive oil
– salt
– marinara or alfredo sauce from the jar
What you do
– after letting the dough rise, roll it out (using a bit of flour) into a circle
– top half of the circle with the broccoli mixed with the pesto, chicken and cheese
– fold the other half of the dough over, pinching the edges closed (use water to make the dough stick together)
– sprinkle olive oil on a pan, place the calzone on the pan and sprinkle more olive oil on the calzone
– add a pinch of salt, sprinkled for flavor
– bake according to the roll instructions (I think it’s like 15-20 minutes at 350-ish degrees)
– serve with marinara or alfredo sauce for dipping
